Ramen is one of my all time favourite dishes. Nothing cheers me up like a nice bowl of noodle soup, it has to be topped with a fried egg, shredded chicken and a sprinkling of seaweed. For me, the spicier the better too, I love having my tastebuds ripped off with too much chilli!
It’s the original comfort food, if I don’t reach for a cottage pie, (like I did today), I like to make homemade Ramen. Cooking it is SO easy, and insanely therapeutic.
Shopping in non-UK chains is the best, and nothing quite beats a little Saturday morning shopping and nose about your local Oriental hypermarket.
I’ve already eaten my dinner, and I could still reach for a bowl of Ramen.
I am so excited that my move to Australia will involve being even more immersed in Eastern culture. Would it be wrong to have Ramen every. single. night!?

3. Pile it with your goodies. (I like to add baby corn, shredded chicken or pork, seaweed, grated carrot, bok choi, freshly boiled egg – cut in half and stacked upwards).
4. Finish with coriander and some spring onions.
